The program of the First International Festival of Traditional Food in the Historical Park

In the last days of August (27.-29.08.), in the gardens of the Historical Park, we will gather around tasty and genuine food, we will meet the guardians of culinary traditions, we will discover forgotten tastes, we will learn a lot about culinary culture in our lands.

Our guests from the National Academy "Culinary Historian" and the Museum of Bread and Traditional Food will meet us with culinary traditions taking us back in the past.

We will be enchanted by the skillful hands of master Salih Pasha from the village of Borikovo, with whom we will churn butter and fill a Tulum to prepare the famous Tulum cheese, according to a recipe from half a century ago.

We will drink matan, we will taste syndirmyo and patetnik from the Rhodope Mountains.

We will delight our taste buds with Gagauz Black Sea cuisine from the village of Balgarevo, with their fish soup and Black Sea mussels with rice. From the northwest and the Trun gorge, we will eat Vratsa kemerki and fry-ups. We will get acquainted with the edible forest mushrooms growing in our latitudes - we will eat dishes prepared with pine mushrooms, chanterelles and morels.

Our guests will be Armenian and Turkish culinary virtuosos.

Culinary treasure hunters will try different types of charlan, Smilyan beans and over 10 types of honey.

Join the tasting of different types of traditional cheeses - two types of green cheese from the village of Cherni Vit (Troyan municipality), mature goat cheese from Yasenovo, whipped cheese from the Western Rhodopes, dairy delicacy Krotmach (Haskovo), served with specially selected wines from the winery Linar.

Our youngest guests will eat einkorn pancakes, richly spread with natural jams, marmalades and a lot of honey. For young and old, we present our ice cream temptation - Turkish dondurma.

The little ones will have fun in the children's workshops of the Association "No Impossible Things" and Art Center.

We will get acquainted with ancient techniques for making charlan, wine and cheese.

For connoisseurs of real, clean and good food, our market of natural foods with products from local farmers will be available.

Along with culinary delicacies, in the festival days we will revive the past through demonstrations by the reconstruction team of the Majesty School of the Historical Park and the Fire and Light Show by "Paliachi", music and dance performances by local ensembles and other surprises.


PROGRAM


Friday (27.08.)


Market of quality, farm products - throughout the festival day. At the stands you will find cow's and sheep's dairy products from the Shevitsa farm, the Voevoda farm and the Avasi farm. Tahini of hazelnuts, walnuts, pumpkin seeds, almonds, peanuts and sunflowers. Tahini halva from hazelnuts and walnuts, a stand with culinary temptations and souvenirs from Indonesia, charlan, culinary temptations from the Museum of Bread and Traditional Foods, pure, natural products from the vegetable gardens of the Historical Park and many other temptations for the palate and soul.

Salih Pasha from the village of Borikovo will prepare whipped cheese and Rhodope cheese. We will eat authentic Rhodope cuisine - syndirmyo and lamb under the shell, prepared by the hands of the unsurpassed master.

Kiril Kirev from the village of Krepost will introduce us to the technology of preparation of krotmach - cream cheese from sheep's milk.

A group for authentic folklore at Iskra-1905 Community Center (Nikolaevka village, Suvorovo municipality) will perform Thracian folk songs and present home-made food - milk banista, rolls with jam, voineshki cookies, cheesecakes, jam with grated dough.

Stand with Armenian cuisine -  exhibition of some of the most ancient recipes in the world preserved. We will eat a skewer in lavash, the famous adana kebab and a honey cake.

8 types of dundurma, 4 types of baklava and kunefe for all visitors of the Historical Park will be prepared by master Zekeria Yuzbashi.

The Children's workshop "Plant a garden in a cup by yourself" from the association "There are no impossible things" will also be present.

Children's workshop and stand with woodcarving by master Kiril Kirev from the village of Krepost, Haskovo region.

We will eat einkorn pancakes made with flour extracted from the fields near the village of Rabovo, Stambolovo municipality. We will garnish them with jams with 100% fruit content, without sweeteners and over 10 types of honey, fresh fruits and nuts.

We will spend the evening in front of the only restored Thracian palace in the world, where we will watch demonstrations by the reconstruction team of the school "Majesty" at the Historical Park, music and dance performances by local ensembles and other surprises.

A group of spring folklore from the village of Chilnov, Dve Mogili municipality will perform folk songs, will treat us to potato rolls, polenta, kumbast, kapana banitsa, malaichi, fried eggs, sweet porridge, pita, banitsa, Herzoic cookies, etc. The ladies' traditional chests aprons, covers and pillows with typical decoration for the region will be out in all their splendour.

The Embassy of Indonesia will present to the guests of the festival Indonesian dances, presented by the dance group "The Charming Roses of the Archipelago", will treat us to Indonesian cuisine and will propose us souvenirs from their stand.

Museum of Bread and Traditional Foods of Koprivshtitsa will prepare dishes from the Neolithic era in authentically restored vessels from the excavations near Ohoden, will take us back to ancient times with the restoration of authentic clothing and tools - stone grinders for milling and pottery.

And in the coolness of the August evening, we will enjoy 300 portions of of the "heroic kebabs", prepared on site by the Museum of Bread and Traditional Foods in the town of Koprivshtitsa.

Representatives of the Gagauz ethnic community from Balgarevo (Shabla municipality) will prepare fish soup and Black Sea mussels with rice and savoury, and the famous melons from the village of Balgarevo will be abundantly lathed with lavender honey extracted from the vast Dobrudzha fields.

Only 15 people from the visitors of the Festival will have the chance to participate in the Tasting of old, almost extinct types of cheese, wine and honey. In all its beauty, the mature Green cheese from the village of Cherni Vit will be presented to them. The only cheese with natural green mold on the Balkan Peninsula. Participants will be able to taste Green cheese with two degrees of maturity - one-year-old pie and 3-year-old mature cheese.
